Cozy Sunday



There is something incredibly cozy on a cold rainy Sunday afternoon where the kitchen beckons to whip up something.  My plan was to hang home and start decorating for Christmas, but when you get a message that your daughter and kiddos miss you, well…… it spurs you to finish up in the kitchen and go hug on those grand-angels and their momma.
So from this gal’s kitchen, I wanted to share a quick update on some recipes. First I wanted to try a new recipe - Pickled Cranberries” and an old  recipe for the best Snack Mix ever. 
The snack mix will be great for the upcoming holidays and I’m hoping the pickled cranberries will be too. I followed the instructions exactly  and I don’t think the first batch will turn out right.. it looks more like cranberry sauce, so I did a second batch.  I’ll let you know if this is worthy of doing it again and which one is better.
Pickled Cranberries
Pickled Cranberries
1 cup apple cider vinegar
1 cup white sugar
2 cinnamon sticks
½ tsp whole cloves
1 tsp kosher salt
2 cups fresh cranberries
In a saucepan mix all the ingredients except the cranberries and boil for 2 minutes.  Add cranberries and when  you begin to hear them pop, remove from heat, pour in a quart jar. (recipe said pint jar but it was too full, splattered on me…. And I ended up with cranberry goo all over me, including my hair – don’t ask.  Lol   Cool, seal up and refrigerate 24 hours before serving. I’ll let you know the verdict on this one.


This is seriously the best

Best Ever Snack Mix
4 cups of pretzels
1 can of cocktail peanuts
1 14oz can of mixed nuts
2 cups wheat chex
2 cups corn or rice chex
2 cups plain cheerios
¾ cup butter
3 T Worcestershire sauce
2 teas garlic salt
2 teas onion powder

Melt butter in the microwaveable bowl, then add in garlic salt, onion powder, worchestershire sauce and mix well.

In a roasting pan add pretzels, nuts, chex and cheerios.  Pour butter mixture over and stir to coat. In a preheated oven – 250 degrees bake for 1 hour, stirring every 15 minutes.
